| 説明 | What's for dinner? Crocodile sisig! Crocodile sisig seemed to be a local or regional speciality: I saw it advertised in several places in downtown Davao, and also in Puerto Princesa. Here is our plate of the fairly tasty crocodile sisig. Sisig is a Kapampangan term which means "to snack on something sour". It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices. In this case, the pork had been replaced with crocodile meat. (Davao, Philippines, May 2013) |
