| 説明 | cover the peas with salted water (plus a few inches) and cook on medium heat for a couple of hours. peas will swell a LOT.brown lamb ribs in oil and rosemary, then add some water and roast in the oven, covered, at 275 until falling off bone. after a couple of hours, turn the heat up to 375 and cook for another half hour or so. remove the lamb and saute carrot, celery, and onion in the fat. add a bay leaf, some garlic and sausage. add in a can of tomatoes, add back the lamb, simmer for half an hour. add beans. mix bread crumbs with melted butter and spread on top. bake at 400 for about an hour, or until crumbs brown.adapted from food52.com/recipes/2360_blackeyed_pea_cassoulet |
