| 説明 | In honor of St. Urho's Day (It's a Minnesotan thing) I made Archipelago Bread. Archipelago bread is older than the colonization of America, so it would not have been made with maple syrup, so I substituted barley malt (I had on hand as I make bagels.) for the maple syrup which enhanced the rich flavor. I also only baked it for one hour, not and hour and 45 minutes. When I pulled it out at an hour to put the glaze on, it had already pulled away from the sides of the bread pan, which is an indication that it's done. To verify, I used a thermometer. Bread is done at 190. It was 188 and would go up to 190 if it rested a bit. I can't imagine another 45 minutes in the oven, but that could explain how extraordinarily black some of the recipe photos are. cookingbythebook.com/recipes/archipelago-bread/ |
