| 説明 | Cucumber kimchi step 1Cut the cucumbers into bite sized pieces and place in a bowl with 2 tablespoons of sea salt. I used a very nice Korean sea salt, it's softer tasting than cooking salt, and I like to think a little healthier too with additional minerals.Leave the cucumbers at room temperature overnight. By morning a large volume of juice had collected as the salt drew out the water from the cut cucumbers. The juice tasted wonderfully fresh, cucumbery and salty, but not too salty. This natural brine will make excellent kimchi juice. |
