| 説明 | Black bass with crispy skin. Served atop a bed of Braised celery. Iberian ham with green peppercorn sauce. The sauce really made this dish. The fish was a bit overcooked for my tastes (though the skin was exceptionally crispy - bravo!). The sauce was infused with the intense flavour of Jamon Iberico, which I fell in love with during my last trip to Spain. The sauce tasted JUST like the ham. How wonderful to impart the flavour of ham, without the tough texture of the ham alongside the delicate fish! |
