説明My all-time favorite Italian cookies. And here's my personal recipe.Ingredients: 3 eggs, 250g flour, 250g sugar, 200g almond 200g "spiked" almonds, 1 teaspoon baking soda, lemon zest, 3 tablesppons of vanilla sugar.-Roast the almonds in a pan. If you want them caramelized add a couple of spoons of sugar. Let them cool down a little before proceeding.-Mix the egg yolks, sugar, vanilla sugar, lemon zest. Batt the egg white until it is "solid/firm" (couldn't find the correct word) . -Carefully mix the egg white with the sugar-egg-yolk mixture. -Last add the flour and the baking soda.-Divide the dough in two parts and make two longish loaves of "bread" take care to space them somewhat apart since the dough will probably spread some more in the oven.Trick: I am using "cling film" foil to help form the loaves out of the pretty moist dough which will otherwise stick to your fingers and everywhere else.Bake for 50min. at a 175°C. Take out of the oven let the "breads" cool a little before taking a knife and carefully slice them. These cookies are then going to "harden" some more. They keep for a long time and are delicious to dip into tea or Vin Santo (sweet wine).
