| 説明 | This is one of my favorite dishes -- simple and flavorful, fresh and rich. Two duck eggs, a few chopped green onions, a handful of small tomatoes, quartered (gently, so skin, flesh, and seeds stay together). Making it is uncomplicated, but requires a little attention. Saute the green onions in a bit of oil until soft, then add the eggs. Scramble them, stirring occasionally, until they're more solid than liquid. Finally, add the tomatoes. By the time the eggs are set, the tomatoes should be warm and just bruised by the heat, but not yet falling apart. |
