| 説明 | I made pumpkin pie pancakes (say that seven times fast) this weekend. I was left with a bunch of leftover pumpkin puree, so I thumbed through a few cook books and found this gem. Pumpkin cookies1 cup butter, room temp.*1 cup sugar1 cup pumpkin puree**1 egg, lightly beaten***1 tsp vanilla extract2 cups ap flour1 tsp baking powder1/2 tsp baking soda1 tsp ground cinnamon1/4 tsp ground allspice1/2 tsp salt1 cup chopped toasted peanuts****1 cup raisins1/2 cup chocolate chips (optional)*****Cream butter and sugar. Add pumpkin, vanilla, and egg. Sift together dry ingredients. Combine with wet. Add nuts and raisins. Drop by rounded teaspoonfuls onto ungreased baking sheet. Bake at 350 for 10-15 minutes. * I used buttery sticks**I used a wee bit more than a cup. I didn't really measure-it was all I had leftover after making the pancakes***I used pureed silken tofu (also unmeasured)**** I didn't have peanuts on hands so I used walnuts*****I opted not to use them. :) |
