| 説明 | I already had grape seed oil in a pot from the weekends frying and I don’t fry often so I try to reuse it but if you don’t then just use a cast iron skillet or something with enough Canola to shallow fry the tofu.I used extra firm tofu and when I came home at around 6pm I placed the cutting board down, put a cloth folded on it then drained the tofu placed it on the towel then placed another smaller cutting board on top then placed about 5 heavy books on top. Just drain the tofu of as much water as humanely possible - I guess you could do this for longer than the 90 minutes i left it for and certainly drain out the towel now and again.The rest is easy.Cut the Tofu into squares.Deep or shallow fry the tofu in the oil and then set aside or paper to drain out the oil.do this in smaller batches if they don’t all fit in.Then once you have fried them all once - probably for about 7-10 minutesThen fry them all over again. they should not be burnt but def turn a more golden brown, you’ll notice they take more of a solid shape as well and are crispy outside.Drain them and set them aside.Sprinkle 1 teaspoon of cornstarch onto the tofu.Dice the garlic into as smaller pieces as you can.I used the mexican green onions but you could use large onion squares or green onions whatever you like.Take 2 tablespoons of oil in the hot wok once the oil is sizzling stir fry the onions for 60 seconds.Then add the garlic, sometimes i add a lil bit more oil to cool this down so the garlic doesn’t burn or take it off the heat.sitr fry this for another 60 seconds or so (nothing scientific about this at all so don’t sweat it just don’t let it burn and keep stirring)take 2 tablespoons of Oyster sauce and add this - it will sizzle and stick so stir quickly and then add one tablespoon of wine vinegar (or any white vinegar you have)stir this quickly then add all the tofu with the spindled corn starch.stir fry this and I add water in tablespoons until i get any thing that is sticking on the bottom into the dish cause thats the good stuff.serve up 1 packet firm tofu 4 cloves of garlic 3 green onion stalks greens as well 2 tablespoons of oil to stir fry 1 teaspoon of cornstarch 3 tablespoons of waterlook no added salt or pepper ! |
